Abura-Age
aka. aburage, inariage, usu-age, usuage
Thin slices of tofu that have been deep-fried until they form a puffy and golden surface. Originating from Japan, it is made by slicing tofu into thin sheets, then frying once to remove moisture and a second time to expand their volume.
FLAVOR PROFILE
Mild and slightly sweet with subtle umami notes, absorbing the flavors of ingredients it is cooked with.
TEXTURE PROFILE
The exterior is crisp and slightly chewy when raw. When cooked, its interior becomes spongy and can absorb liquids.
Culinary Uses
- Simmered dishes: Commonly used to absorb broths and sauces due to its porous texture.
- Sushi: Used in inari sushi by stuffing with seasoned rice.
- Soups: Added to miso or ramen soups for additional texture and flavor absorption.
