2 tsp | baking powder | |
1/2 or 1 cup | hot water, depending on cooking method |

PROCEDURE
Step 1: Prepare the Batter
1/2 cup | Chinese brown sugar |
1/2 or 1 cup | hot water, depending on cooking method |
1 cup | all-purpose flour |
2 tsp | baking powder |
- The batter can be optionally aerated using a whipping siphon to achieve a lighter texture. If using a whipping siphon, use 1 cup of hot water in the batter. If not using a whipping siphon, use only 1/2 cup of hot water.
- Whisk the brown sugar in a stainless steel bowl with the hot water the until the sugar is completely dissolved.
- Sift the flour and baking powder together.
- Add the sugar water mixture to the flour and whisk well until smooth, about 5 minutes.
